Chocolate Scotcharoos
The absolute joy of these easy, chocolate scotcharoos is that they are super easy, super fast and super delicious.
Hands down, this is my husband’s favorite treat.
The absolute joy of these little babies is that they are super easy, super fast and taste fabulous. I made a double batch – half for him to take to work, half for us at home.
I made them on Sunday. It is now Tuesday and both batches have disappeared down various people’s gullets both at work and at home. They are officially GONE!
Chocolate Scotcharoos
Ingredients
- ½ cup butter
- 1 cup light corn syrup
- 1 cup sugar
- 1 cup peanut butter
- 8-10 cups rice krispies
- 6 ounces chocolate chips
- 6 ounces butterscotch chips
Instructions
- Melt butter. Add corn syrup and sugar.
- Bring just to a boil and remove from heat. Stir in peanut butter. Add rice krispies and mix well.
- Press mixture into large baking sheet (11X17). Melt the chocolate and butterscotch chips in the microwave on high for 2 minutes. Stir. Continue microwaving for 30 second spurts until chips are melted.
- Spread chips on top of rice krispie mixture. Let chocolate set. Cut into squares and really, try to share a few before you eat the entire batch!

I made these for a luncheon because we had a few gluten-free people attending, and they were a huge hit!! Love the idea of putting them in an 11×17 pan. I did double the chocolate and butterscotch chips to have thicker layer.
Have you frozen scotcharoos before? Silly question, it Id love to make them ahead for an upcoming event. Can’t decide if they freeze well tho…
Hey Mel, sorry for the delay in responding. I have never frozen scotcharoos unfortunately. So I don’t know how they’ll fare. I’m worried the rice krispie layer might get a bit soggy after defrosting, but it might work just fine!

We loved them.
Made a batch for the folks at work. They devoured them and begged for more. Made that batch w/o the butter. I’m tryin it with. Ya gotta think butter makes everything better!

Hi. Just curious if these work out okay with the whole cube of butter and the peanut butter? Not too greasy? Or does it just make them extra soft?
I’ve never made this recipe with the butter before. Same recipe only no butter and only 6 cups of rice crispies. Interesting … I wonder what the difference in taste is (albeight more calories).

Hey Mel, this is a long time favorite recipe of my family! A friend brought some to me the other day and they were made with the exact ingredients, but used Special K cereal instead of Rice Krispies. I actually think I might prefer it. Try it! YUMMY!

Mel, I just made these. HOLY DELICIOUSNESS!!! I literally could eat the whole pan…literally. with a glass (bottle) of wine to wash it down. My 3 1/2 year old son has a friend over to play, and they are VERY happy I made these! I ended up using the entire bag of choc chips, and the entire bag of butterscotch chips. wanted to make sure I had enough to cover them all since I pressed these into my large roasting pan. I think I’m going to be making these A LOT!!!

My Grandma Nita and I used to make these often…oh my, so so delicious. I don’t think I’ve made them since I’ve been married…that should change. Thanks for reminding me of these yummy treats. Oh I just noticed you use rice krispies, we used Special K, FYI it works well too. -Jenna

I’m in India right now but I miss these soo much. They are my favorite treat in the U.S. and I can’t make them here because they don’t have the ingredients! Your pictures are tempting me!
