Cheesecake Stuffed Strawberries
These cheesecake stuffed strawberries are elegant and so easy to prepare! It’s like a bite of strawberry cheesecake without all the work!
Valentine’s Day is a family affair around these parts.
Long gone are the days of Brian and I gazing into each other’s eyes over a romantic dinner in a secluded booth at a five-star restaurant. Wait a second, did that ever happen? I’m pretty sure that hasn’t happened in the history of ever.
Maybe in 20 years, but for now Valentine’s Day is a family holiday and I wouldn’t have it any other way.
Along with our annual Valentine’s Day scavenger hunt (not food related), we do a candlelight dinner.
My four boys go crazy over this tradition. Just last night, I overheard my 8-year old say to his younger brother in a voice that could barely contain his excitement, “Only a few more days before we get to eat dinner in the dark!”
Clearly I need to get candles that produce a bit more flame. Here I thought I was teaching my boys the niceties of fine dining and all along, they’ve just been ecstatic to eat dinner in a situation that approximates cavelike dwelling.
Over the years, I’ve served a fancy meal, everything-heart-shaped meal, and an all pink or red meal (that one was a bit scary).
This year, I have a few new ideas up my sleeve. First up are these delightful cheesecake stuffed strawberries.
After tasting them, the only coherent thought I could muster was “where have these been all my life?” Not only are they a cinch to prepare, they taste absolutely amazing.
It’s like a heavenly bite of strawberry cheesecake with the emphasis on the strawberry, which is just fine with me. They are an absolute cinch to prepare and look much more elegant than the preparation requires.
I don’t know if I’ll serve these cheesecakes stuffed strawberries as a sweet side dish or as a dessert option, but either way, come February 14th, they’ll be on our table and I kinda sorta think they should be on yours, too.

Cheesecake Stuffed Strawberries
Ingredients
- 24 medium to large strawberries
- 8 ounce (227 g) light cream cheese
- ⅓ to ½ cup (38 to 57 g) powdered sugar
- ¼ teaspoon vanilla extract
- ½ cup (50 g) graham cracker crumbs
Instructions
- Remove the tops of all the strawberries and and cut out a cone shape from inside the middle of each strawberry with a paring knife – a little well to be filled with cream cheese mixture.
- Mix together the cream cheese, powdered sugar and vanilla extract with an electric mixer until smooth and creamy. Fill a ziploc bag with the cream cheese mixture (filling it into one of the corners). Twist the top of the bag and snip the corner of the bag with the filling.
- Squeeze filling into each strawberry and sprinkle with graham cracker crumbs. Store in the refrigerator until ready to serve.

If you pack them side by side into a pan or dish, they’ll stand up.
I piped the cream cheese filling in. They looked great!!!!
I mashed the removed insides of the strawberries and added to the cream cheese mix and added a dash of pepper, delish.

Made these today and already have requests by my kids and husband to make another batch. Soooo yummy! I let my girls help too and they had a blast.
I made these last night and loved them!!! (the hubby went nuts over them as well) I didn’t let my cream cheese soften up long enough and had a real mess on my hands with a plastic baggy that apparently wasn’t tough enough and I had cheesecake coming out the sides! So let your cream cheese soften and use a trusty bag. I’ve never perfected those piping skills, but the taste was out of this world!!!

I made these last night for a BBQ gathering and everyone absolutely loved them. They are so easy to make once you’ve mastered getting the middle out of the strawberries. Definitely recommend them.

Mel, I always struggle with what dessert to make for Valentine’s Day because my husband’s birthday is the next day. This was the perfect “lighter” option so that we would still feel like eating birthday cake (or pie, in this case) the next day.
My daughter made these for a lunch potluck at her new job. Way too impress your coworkers! They loved them. I’m making them now. Serving several topping choices. Toasted coconut, toasted Chopped amonds, graham crumbs, chocolate graham crumbs and grated dark chocolate. Adding a bit of lemon juice to the filling also. Thanks!!!;
Made 190 of these for Easter breakfast at our church. I did not bring any home with me. Five cartons of Costco strawberries and I tripled the cream cheese mixture. Huge hit with lots of complements!!

I made these last night for my husband, but he is a big fan of protein, so I used 4 oz cream cheese and 8 oz cottage cheese. Delicious! Thanks for the great idea:)

Katherine and Donna – well, the scavenger hunt isn’t anything crazy big, but my kids look forward to it every year. Basically, I gather/buy 9-10 little (and I mean little, like a silly bandz or a pencil or a pack of gum or small toy) things for each child. Then, I cut out 9-10 hearts of the same color for each child (so in my family, I end up with a set of green hearts, a set of blue hearts, a set of red hearts, and a set of yellow hearts because I have four boys doing the hunt). I paper clip one heart onto one paper bag and put one little toy/item in each paper bag. So in the end, I have about 40 paper bags. Then, I get my thinking cap on and write little rhyming clues and paper clip the next clue onto the bag with the heart. I use the same clues for each boy, mostly, I just put them in a different order so they aren’t going to the same place at the same time. Anyway, that’s it. My kids love it and talk about it all year. In fact, I’m sitting down tonight to write the clues. Wish me luck!

Tiffany – I’d suggest making them 3-4 hours in advance. Anytime you wash strawberries in advance, they can get a bit soft/soggy upon sitting so I wouldn’t make them too far before serving (just long enough to set up and chill for a bit).
These look so good. It’s nice too that the price of strawberries are starting to come down too. It’s hard paying $3 a lb for them in the middle of winter. Thanks Mel!

I’m not a fan of rich desserts, especially chocolate desserts (I know, I know). I think this sounds like a perfect dessert.

I have a filling I use in the same way to fill strawberries…….. I use a block of cream cheese room temp. and a small jar of marsh mellow fluff. Whip it up and fill the strawberries…….Its a real croed pleaser.
