Jalapeño Cheddar Turkey Burgers
Juicy and flavorful, these jalapeño cheddar turkey burgers are incredible! Don’t let the jalapeños scare you. They add tons of flavor (leave out the seeds for less heat!).
Favorite recipe alert! These jalapeño cheddar turkey burgers are at the top, top, top of meals I could eat for the rest of forever.
The flavor is incredible. They are fast and easy to make. And they get rave reviews from my entire family every time they magically appear at dinner.
I’ve actually never met a burger more flavorful and more delicious than these. They are one of a kind and crazy delicious.
Let’s Talk About Ground Turkey
These are, after all, a turkey burger. BUT, you could also make them with ground chicken or even try ground beef. The flavors won’t be as pronounced if you use ground beef, but they will probably still be pretty delicious.
All ground turkey is not created equal. I highly recommend staying away from the ground turkey in the plastic shrink wrapped tubes. In my unfortunate experience, the texture and consistency are very, very wrong.
I prefer buying ground turkey in the trays, and I like using the 85/15 for this recipe for better flavor (but you can use 90/10, too – just make sure to oil the grates of the grill well so the burgers don’t stick).
The ground turkey mixture for these burgers is stickier and a bit harder to work with than burgers made with ground beef (which is a little sturdier than ground turkey).
Lightly greasing your hands with cooking spray before forming the ground turkey into rounds can help. If the ground turkey mixture is soft that it’s hard to work with, you can add bread crumbs or finely crushed crackers (like saltines) to help bind the meat mixture together.
If it’s just a little bit soft, persevere even if it’s a bit messy. The texture and flavor will be amazing!
Jalapeños: flavor or spice?
Don’t let the jalapeños in the ingredients list or title scare you off. They add an incredible amount of flavor and are critical to the success of these yummy burgers. A couple of tips:
- remove the seeds and membranes for less heat
- chop the jalapeños really finely
- start with half of a jalapeño if you’re still worried (but don’t leave them out completely!
Of course if you are a heat warrior, consider doubling the jalapeño and add the seeds as well.
Once grilled, we serve these juicy turkey burgers on buns with guacamole (not even optional, not here), tomatoes, lettuce, and sometimes a couple extra slices of cheddar cheese.
Although the jalapeño turkey burgers are super tasty on their own, adding the guacamole takes them waaaay over the top.

Jalapeno Cheddar Turkey Burgers
Ingredients
Burgers:
- 2 pounds ground turkey
- ½ cup finely diced onion, white, red or yellow
- ¼ cup finely chopped fresh cilantro
- 2 garlic cloves, finely minced
- 1 medium jalapeño seeded and finely chopped (see note)
- 1 teaspoon ground cumin
- 1 teaspoon paprika, sweet or smoked
- Juice of 1/2 lime, about 1/2 tablespoon or so
- ½ to 1 cup shredded sharp cheddar cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
For Serving:
- 6 soft hamburger buns
- Guacamole
- Sliced cheddar or Monterey Jack
- Tomatoes
- Lettuce
Instructions
- Heat a charcoal, gas or pellet grill to medium-high. If needed, oil the grates to keep the burgers from sticking.
- In a large bowl, mix all of the burger ingredients together until well combined.
- Shape the meat mixture into about 6 burger patties (you can do more or less than this depending on what size you want them and/or how big the buns are that you’ll be serving them with).
- Grill the turkey burgers for 5 to 6 minutes per side until cooked through and an instant-read thermometer inserted in the thickest part of the burgers reads 165 degrees F.
- Remove from the grill, tent with foil, and let rest for 3-5 minutes before serving. Serve on buns with guacamole, lettuce, tomatoes, cheese slices, etc.

Mel, we love the flavor of these burgers but my husband complains every time he grills them because they fall apart on him. Or if they don’t fall apart then they get charred in certain spots. Any tips for grilling them and/or making the patties so he’s not so frustrated with the process? He’s threatening to make me cook them stovetop from now on….
Sorry to hear that, Rebecca! What brand/type of ground turkey are you using? I’ve found that can make a difference. The ground turkey in a tube is usually much mushier/softer in texture than the ground turkey in flat packages. You can also add try adding some fine bread crumbs to help firm the mixture up just a bit.
MADE these for the second time last night! LOVE the burgers! We will never make them any other way. Used a huge jalapeño with no seeds or ribs, and it was outstanding. The first time, I forgot the cheese, but used Mexican blend cheese last night. The first time we grilled them, but since it was raining, we did them on the stovetop. They were great, but must have been because of the cheese, so they charred a bit. We eat them bunless, so we topped with a Mango Salsa ❤️. FABULOUS recipe!
One bite in, my 6 year old shouted, “Mom, this is GOOD!” The other picky eater ate the whole burger, too, so this is a SUPER DUPER DINNER WIN!
I subbed a big spoonful of canned green chilies for the jalapeno and lime and used dry cilantro, but they formed and held together beautifully and tasted great!

The nutrition is clearly incorrect. Sometimes you just have to apply common sense. 200 cal would mean you could eat 10x this per day and still be around 2000 cal. There are a lot of problems with a certain online Nutrition Calculator (Edamame) that promises copy/paste “nutural text understanding”. It’s gotten better, but still very flawed. A lot of the ingredients are simply not recognized by Edamame, but it fails to tell you this. Instead spewing out numbers that might as well be plucked from the air. (Note: NYTIMES has recently stopped using Edamame.) This recipe is around 600 calories per serve.

Sure, I bet they can. I’d try 375 degrees F on a foil-lined baking sheet (I’d grease the foil) for 6-7 minutes per side?

I made these for the second time a couple nights ago and had one for lunch (for the second time … and I’m NOT a leftovers person even though I aspire to be) again today. The first time I made them we had not ONE leftover (and I made extra) – this time I made over 3 lbs and that was enough for our family of 6 to have leftovers + and I’ll do these the same every time. Made these this week and really enjoyed them. Good flavor and they were not dry at all. They also reheated well. The only change I made was to use a poblano because my grocery store was out of jalapeños. I put the poblano under the broiler until the skin was blistered and black, pulled off the skin, and then proceeded with the recipe. I have company coming next month and I was thinking of making a burger bar – this would be a great option to include for something different.
What a great idea to roast the poblano before using in this recipe! I bet this will be a hit if you decide to include it in the burger bar lineup.

Wow wow wow. I think this is my new favorite. How did we miss this recipe from years past? No one complained about the jalapeño. I love the creaminess from the avocado, and added a tad of pico de Gallo rather than a tomato. Five stars.

Delicious. The only thing I changed was I didn’t make this into burgers. I’m a mess at forming burgers for some reason, I must have missed that class. Mine either come out too thin or too fat but either way just all wrong. So I used all of the same spices and ingredients but did a sort of not-so-sloppy joe in that I broke the turkey up as it cooked. Really delicious!

Well, we’re partial to chicken in our household, so we loved those better. But only slightly. That’s a big win for turkey considering none of us liked it before this recipe happened to it. Also, strangely enough, we don’t get ground chicken here in the UK, so I do it myself at home. The fact that we do get ground turkey readily is another point in its favour.
I don’t have a grill. Can I just cook them stovetop in a skillet?

These burgers have an amazing flavour, and I would love to try them grilled. Because I don’t have a bbq so I fried them, and it was a burnt smoking mess. I think because of the cheese. We still ate them and they tasted good but I wouldn’t fry them again, or I’d omit the cheese.

Am quite sure this is a very dumb question – but when adding guac- do you replace the normal burger mustard and ketchup etc? So guac is the only spread on the bun? Thanks!!
Honestly you can do either – whatever your preference is! I usually use it in place of, but my husband likes mustard and the guacamole.

These are A-MAZ-ING!!! I have been making these for a few years and hey are definitely our go to burger! I’ve always used ground beef and I don’t think I’ll ever make a regular burger again!!! They are simply wonderful! Tonight I’m making pretzel buns for the first time, so I’m extra excited! (Not to mention we’ve been fasting today so the excitement is pretty high all the way around!)

This is a crazy coincidence. I never buy turkey for the family because no one likes it. So I don’t really know what made me add it to the grocery delivery that I received yesterday.
